Step 1

Wash the defrosted goose and pat dry with a towel. Then trim the wings and neck. Rub the prepared carcass on top and on the inside with a mixture of salt, pepper and any other spices of your choice. It is better to do this in advance so that the goose has time to soak.

Rinse the apples well, peel and cut into wedges.

Stuff the goose with apple wedges and sew up the hole in the abdomen with thread.

Melt the butter.

Put the carcass on its back on a baking sheet or in a special form, add a little water, and grease the goose with melted butter on top and send it to the oven to fry for one and a half to two hours.

During frying, water the goose with your own juice and melted fat from time to time to form a delicious crust. To soften the heat in the oven and to avoid burning, place the tray of water underneath.

Step 7

To speed up the baking process of the goose, you can use the culinary sleeve, it will protect the poultry meat from drying out, and the dish will turn out to be more juicy. Cut off a piece of the sleeve, having estimated in advance how much is needed for the carcass. Gather one edge with a "bundle" and fasten with a special clip. Place the stuffed goose in the resulting bag, collect and secure the other end with a clip. Pack the carcass carefully so that the sleeve does not open during baking and juice does not leak out. Then make three or four punctures in the sleeve with a needle and place the goose in the preheated oven. About 15 minutes before the end of baking, remove the carcass from the oven, carefully cut the sleeve and put the goose back in the oven to brown the crust.

Remove the threads from the finished goose, take out the apples with a spoon and place them on a platter.

Cut the goose into portions, keeping the shape of a bird, place on top of the apples and garnish with finely chopped parsley, dill and basil.
