You want to decorate your New Year's or Christmas table with something special. And the main decoration of the table can be a goose. Take the time and bake a juicy goose with an incomparable filling of buckwheat, liver and apples. Even people who do not like buckwheat will gladly eat a portion of the dish and ask for more additives!
It is necessary
- -1 goose for 2.5-4 kg,
- -1 glass of buckwheat,
- -2 onions,
- -200 grams of any mushrooms,
- -300 grams of goose, chicken or beef liver,
- -2 apples.
Instructions
Step 1
Wash the goose, cut off the tail and remove the fat. Then rinse well and pat dry with paper towels.
Step 2
Peel the apple and grate. Rub the goose inside and outside with salt (amount of salt to taste) and then grated apples. Move the goose to a cool marinating area for 1-3 hours.
Step 3
Boil buckwheat. Peel the onion and cut into cubes. Cut the mushrooms and liver into arbitrary pieces.
Step 4
Fry the onion in a little vegetable oil until soft. Add prepared mushrooms and liver to the onion. Fry for 2-3 minutes.
Step 5
Cut the second apple into cubes or quarters (optional) and toss with the onion, mushroom and liver filling. Season with salt and pepper to taste.
Step 6
Stuff the goose carcass with the filling, sew up.
Step 7
Transfer the stuffed goose to a roasting sleeve. Place the sleeve with the goose on a baking sheet. Pierce the sleeve with a toothpick in 2-5 places.
Step 8
Preheat oven to 180-200 degrees. Roast the goose for 2-3 hours. About 30 minutes before the end of baking, remove the goose from the oven and carefully cut the sleeve to brown the goose.
Step 9
Transfer the finished goose to a large, beautiful dish. Garnish with fresh apples, cherry tomatoes and fresh herbs when serving.
