There are many recipes for "Nicoise" - Nice salad. I bring to your attention a basic, but no less delicious recipe.
It is necessary
- For 2 persons:
- Half a cabbage of bitter salad;
- 2 large ripe tomatoes;
- 2 boiled eggs;
- 2 large onions;
- 4 fillets of anchovies;
- Half a large red sweet
- pepper;
- 100 g green beans (lemon juice, garlic, parsley, salt, olive oil for making beans);
- 1 tbsp medium-sized olives;
- 100 g canned tuna in oil;
- 2 teaspoons lemon juice
- 2 tablespoons olive oil
- 1 clove of crushed garlic;
- Several basil leaves;
- 1 tsp wine vinegar;
- Sea salt and pepper to taste.
Instructions
Step 1
Prepare the dressing: mix all the ingredients and leave to infuse.
Step 2
Boil the beans in salted water for about five minutes, rinse with cold water to maintain their color, and then toss them into a pan with heated olive oil and a clove of garlic. Fry for a couple of minutes. Put on a plate, sprinkle with parsley and pour over with lemon juice.
Step 3
Disassemble the salad into leaves, rinse, dry.
Boil eggs, cut into 4 parts.
Tomatoes - in half and each half in 3 parts.
Onions - in rings. Pepper and cut into strips.
Step 4
Put in a salad bowl in layers: lettuce, onion, tomato, pepper and beans. Fill with dressing, mix. Before serving, put olives, anchovies, tuna and egg quarters on top. Sprinkle with lemon juice, season again.
