Lviv cheesecake is a delicate and exquisite dessert, a real find for sweet lovers!
It is necessary
- For cheesecake:
- - 500 g of cottage cheese (fatty, at least 9%);
- - 4 eggs;
- - 150 g of sugar;
- - 100 g softened butter;
- - zest of 1 lemon;
- - 30 g of raisins (instead of raisins, you can use any other dried fruits, as well as poppy seeds, candied fruits or nuts);
- - 1 tbsp. l. semolina.
- For glaze:
- - 60 g butter;
- - 60 g of sugar;
- - 3 tbsp. sour cream;
- - 2 tbsp. cocoa powder.
Instructions
Step 1
Grind the cottage cheese through a sieve. Please note: the cottage cheese must be dry, otherwise the cheesecake will turn out to be dense and tasteless. To avoid this, squeeze excess liquid through cheesecloth.
Step 2
Separate the whites from the yolks. It is very simple to do this: you need to hit the shell with a knife and carefully, over the bowl, divide it into 2 halves. This will pour most of the protein into the bowl. The contents of that half of the shell, in which the yolk remains, should be poured into the palm of your hand and your fingers slightly apart, so that the protein seeps through them into the bowl, and the yolk remains in your hand.
Step 3
Pour sugar into the yolks and beat with a mixer until smooth. Then add softened butter, grated zest, raisins, semolina and cottage cheese to the yolks. Mix everything until smooth (you can use a mixer).
Step 4
Beat the whites with a mixer until stable peaks and gently mix with the curd-egg mass.
Step 5
Grease the muffin pan with butter and sprinkle with flour (you can cover the pan with baking paper instead). Pour the prepared mixture there.
Step 6
We bake in the oven at 180 degrees for about 50 minutes.
Step 7
When the Lviv cheesecake is ready, take it out of the oven and let it cool completely, after which we remove the product from the mold, turning it over onto a dish.
Step 8
We make the glaze: put butter and granulated sugar in a saucepan and put on low heat. Keep on fire until the butter melts, stirring continuously. Add sour cream and cocoa. Stir constantly, bring the glaze to a boil and turn off the heat immediately.
Step 9
Pour the cooled syrnik with hot glaze and put it in the refrigerator overnight.
Step 10
Cut the chilled Lviv cheesecake into slices and serve with coffee.
