I only recently learned that Lviv cheesecake can be made from cottage cheese. Before that I cooked only classic cheesecakes or curd casserole. But it turned out that there is an even tastier dish made from cottage cheese! We will prepare it now.

It is necessary

  • 1. Granular curd - 500 grams
  • 2. Cottage cheese in briquettes - 500 grams
  • 3. White sugar - 180 grams
  • 4. Eggs C0 - 5 pieces
  • 5. Coconut puree - 100 grams
  • 6. Corn starch - 17 grams
  • 7. Butter 82, 5% - 100 grams
  • 8. Zest of one lemon
  • 9. Seeds of one vanilla pod
  • 10. Walnuts - 50 grams
  • 11. Pieces of pear - from 2 pears
  • 12. Cocoa - 2 tablespoons
  • 13. Almond petals - optional
  • 14. Brown sugar - for decoration

Instructions

Step 1

You must first get all the ingredients so that they are at room temperature.

Prepare the form. I have this classic cake pan, which is 25 centimeters long. Cover the form with foil and grease with oil.

You can use a square shape, but in the classic version, Lviv cheesecake is prepared in the shape of a cake. Also, in the same classic version, the cheesecake is covered with chocolate icing on top.

Step 2

In a bowl, combine two types of cottage cheese, sugar, eggs, coconut puree, starch, butter, lemon zest and vanilla seeds. Punch with a blender at minimum speed until the mass is completely combined.

Step 3

Add chopped nuts and pear pieces. Stir gently with a spatula.

Divide the mixture into 2 parts. Add cocoa to one and mix.

Step 4

Preheat the oven to 180 degrees, top-bottom, convection.

Step 5

In the prepared form, begin to spread the mixture for the cheesecake over a tablespoon. First vanilla, then chocolate. Spread, alternating masses, until both mixtures run out.

Smooth the surface of the cheese pan with a spatula. Sprinkle on top with almond petals and brown sugar (this is necessary so that a beautiful and tasty crust forms on top of the Lviv cheesecake)

Step 6

We send our cheesecake into a preheated oven, bake for about 45-50 minutes. After cooking, turn off the oven, but leave the cheesecake inside the oven until it cools completely. This is necessary for the cheesecake to become the perfect consistency.

After complete cooling, put the cheesecake in the refrigerator overnight. This step is needed to fully stabilize the curd.

Step 7

In the morning we take out our cheesecake and enjoy its delicate texture and extraordinary taste!
