An inexperienced consumer may confuse medium-quality green tea leaves with yellow tea leaves. But looking at the price, he will understand: yellow is one of the most expensive teas. And this is no coincidence: yellow tea is unique, rare, grown only in the Chinese province of Fujian. Previously, only members of the imperial family drank it. And still not blossoming tea buds and the youngest leaves could be collected only by beauties under 18 years of age. For a long time it was forbidden to export yellow tea outside of China. This tea first came to Russia at the beginning of the 19th century.

Step 1
Take a clear teapot or large glass goblet. Put some dry tea leaves in there - just enough so that it covers the bottom.
Step 2
Heat the water to a maximum of 80 ° C. In no case should it be boiling water. Fill the tea container halfway with water.
Step 3
Let the tea brew for 2-3 minutes. Moreover, it will be very interesting to watch the brewing process. During this time, the tea buds will open and "dance", three times rising to the top of the vessel, then sinking to its bottom.
Step 4
As soon as the "dance" is over, and the tea leaves are not yet dark yellow, tea can be served on the table. Just top up your infuser with hot water beforehand.
Step 5
Place the remaining dry tea leaves in a tin or earthenware jar (but not in a glass or wooden one). It should close tightly. Place it in a cool place, away from foods that give off strong odors.
