Lavash is Armenian thin bread. The national Armenian lavash is baked in tonyr - this is a stove built in the depths of the earth, the walls of the stove are lined with special bricks. Tondyr stoves appeared in ancient times. You can also make Armenian lavash at home using a regular baking sheet or cast iron pan.

- 1 tablespoon vegetable oil;
- 1 teaspoon (no slide) salt;

- 2.5 cups flour.
Instructions
Step 1
Lavash is baked on the walls of the tonyr. Rolled pieces of dough weighing 500 grams are thrown from hand to hand, stretching the dough to the desired thickness. The finished thin layer of dough is pulled onto a special elliptical pillow and with a quick movement of the hand the cake is transferred to the walls of the tonyr and left to bake for three minutes. The modern young generation began to build special electric ovens with metal sheets and portable clay small tonyrs, thereby simplifying the technology for baking lavash.

Dissolve dry yeast in warm water. Add vegetable oil, salt and sugar. Add flour, gradually sifted through a sieve, and knead the elastic dough. Knead the dough for two minutes. Then transfer the dough to a greased cup, cover with a paper towel and let it rest for one hour.
Step 3
Knead the matched dough and divide into about ten parts (the number of parts depends on the size of the pan). Roll the dough into balls, cover them with foil, let them stand for another five minutes.
Step 4
Pour flour on the surface of the table, put a bun of dough and roll it into a thin layer, no more than 2 millimeters in thickness.
Step 5
Heat a dry skillet. Never add oil!
Step 6
Transfer the tortilla to the skillet. If the cake is larger than the pan size, you can spread the excess dough on the sides of the pan.
Step 7
Roast for a few seconds on each side. When the pita bread turns white, and ruddy dots appear on it, then immediately turn it over. The longer you bake, the drier it will be, so don't overcook the pita bread.
Step 8
Fold the cooked pita bread in a stack, cover it immediately with a clean towel, so it will soften a little. Lavash can be eaten as bread and used to make shawarma, rolls and other types of snacks. Bon Appetit!
