It is necessary

  • For filling:
  • - one kilogram of sour apples;
  • - a teaspoon of cinnamon;
  • - 100 grams of raisins;
  • - one packet of vanillin or vanilla sugar;
  • - 100 grams of almonds (can be replaced with walnuts);
  • - three tablespoons of bread crumbs;
  • - three tablespoons of lemon juice;
  • - 130 grams of butter.
  • For the test:
  • - 250 grams of flour;
  • - 120 ml of warm water;
  • - the yolk of one egg;
  • - a tablespoon of vegetable oil;
  • - a pinch of salt.

Instructions

Step 1

The first thing to do is prepare the dough. To do this, take a deep bowl, sift flour into it, add warm water, yolk and salt, then mix everything thoroughly. Take the resulting lump in your hands and knead an elastic dough. Roll the dough into a ball, brush it with butter and let it rest in a cool place for about 30 minutes.

Step 2

Squeeze out the juice of a quarter of the lemon. Cut the apples into quarters, remove the seeds from the wedges, then cut them into slices. Put the chopped apples in a deep dish, add lemon juice to them and stir them (this is required so that the apples do not darken).

Step 3

Chop the almonds, rinse the raisins well and dry. Combine crushed almonds and raisins with apples.

Step 4

Melt the butter. Place a damp linen towel on your work surface and roll out the dough very thinly on it. Lubricate it with butter.

Step 5

In a cup, combine vanillin (vanilla sugar), bread crumbs and cinnamon. Sprinkle the rolled dough with the resulting mixture (sprinkle it evenly).

Step 6

Place the filling of apples, nuts and raisins on the dough, then roll everything into a roll. At this stage, it must be remembered that in no case can you crush the roll with your hands, otherwise it will not turn out tender and airy.

Step 7

Put the resulting roll on a greased baking sheet with the "seam" down, bake in an oven preheated to 180 degrees for 35-40 minutes, pouring melted butter every 10 minutes.
