Step 1

Gently pluck or singe the duck carcass, rinse thoroughly and pat dry with a towel. Rub inside and out with salt and pepper. Refrigerate the bird for an hour. Then wrap the duck wings and the bottom of the legs with foil to prevent them from burning during cooking.

Step 2

To prepare the filling for the duck, peel one large apple from the skin and core, cut it into small wedges. Add pineapples, cut into small pieces. Mix.

Step 3

Stuff the prepared duck with apples and pineapple filling. Sew up the skin or stab it with toothpicks. Put the poultry carcass back down in a frying pan or baking sheet, pour in half a glass of water and place in an oven heated to 200 degrees for 1, 5-2 hours. Water the duck periodically with the melted fat and juice. When the poultry carcass is browned and covered with a small crust, cover it with foil on top so that the breast does not dry out. You must try not to overexpose the duck, otherwise the meat will be dry. 10 minutes before the end of cooking, cut the two remaining apples, mix with cranberries and place in a baking sheet around the carcass.
