Eggs are chosen fresh and clean, it is advisable to wash them in warm water using a dishwashing brush before cooking. Eggs should be used at room temperature. It is advisable to melt the butter and add at the end of the whisk. It is recommended to salt the omelet before pouring the whipped mixture into the mold. Milk is best used warm. Cold will not work, but hot will make the color of the omelet gray, and the omelet itself will not be uniform in consistency. You can use low-fat cream for this purpose, then the omelet will be more aromatic and tender in taste.

Then you need to beat the eggs and milk until smooth, add salt, butter and continue beating into a thick foam. It is desirable to have a lot of bubbles on the surface.
