The traditional Kazakh dish beshbarmak is prepared from thin layers of dough, a large amount of onions, herbs and meat. Lamb or fatty poultry is usually used as the last ingredient. Delicious beshbarmak is made from homemade duck.
It is necessary
- - duck;
- - 3 heads of onions;
- - a bunch of green onions and parsley;
- - 1 egg;
- - 1 glass of warm water;
- - salt;
- - flour;
- - black pepper to taste.
Instructions
Step 1
Gut the duck if necessary, wash well and cut into 4 pieces. Place in a saucepan and cover with water so that it only covers the meat. Bring to a simmer, skim, reduce heat, and cook, covered, until the meat is tender and separates well from the bones. Season with salt and pepper to taste.
Step 2
While the duck is cooking, make the tortillas. To do this, beat an egg with a glass of warm water, salt and add flour, gradually kneading a soft but elastic dough. Then wrap it in cellophane and leave it at room temperature for 20 minutes. After the allotted time, roll out the dough into a very thin layer and cut out circles with a diameter of 8-10 cm from it.
Step 3
When the duck is ready, remove it, cool slightly and separate the meat from the bones. Cut the onion into half rings and cover with a little broth to get rid of the bitterness. Boil the tortillas in the remaining broth, and then place them on a large flat dish. Put pieces of meat, onion steamed in broth on top and sprinkle with herbs.
