Divide the dough into 2 equal portions. Grease a mold with vegetable oil, lay out the dough and smooth over the surface. Place in an oven preheated to 180 degrees and bake for about 20-25 minutes until golden brown. Bake like this one more time.
Step 3
Prepare a protein crust. Beat 4 egg whites with 250 g granulated sugar until a firm foam. Line a baking sheet with baking paper and lay out the crust. Place in an oven preheated to 180 degrees and bake for 50-50 minutes.
Step 4
Make a custard. Mix 2 yolks, 125 g granulated sugar, add 1 tbsp. flour, milk, put on low heat and bring to a boil. Remove from heat and leave to cool. Add butter and mix everything well until smooth.
Step 5
Put the bottom crust on a dish, grease generously with cream, cover with the protein crust, brush with cream, then put the top crust and grease with cream again. Grate dark and white chocolate on a grater. Chop the nuts. Sprinkle the cake with chocolate and nuts.
