Sorcerers are a traditional Belarusian dish made with grated potatoes and meat. Sorcerers always turn out to be juicy and very tasty; preparing a lazy version takes a minimum of time.
It is necessary
- Ingredients for 4-6 persons:
- - 8 medium sized potatoes;
- - fatty pork - 300 g;
- - lean veal - 350 g;
- - 2 eggs;
- - 2 large onions;
- - sour cream - 200 g (and 1 more spoon);
- - salt and pepper to taste;
- - ghee for frying (vegetable oil can be used).
Instructions
Step 1
Cut pork and veal into small pieces and turn them in a meat grinder. Peel 1 onion, chop very finely, add to the meat. Salt and pepper to taste, knead the homogeneous minced meat. Cover the cup with minced meat with foil, put it in the refrigerator.
Step 2
Peel the potatoes, rub them on a medium grater, transfer them to a sieve or colander for 10-15 minutes, so that the excess liquid is glass.
Step 3
We clean the second onion, rub it on a fine grater and put it in a bowl, add the potatoes and a tablespoon of sour cream, mix the ingredients thoroughly.
Step 4
Beat the eggs lightly and add to the potato mass. Salt, pepper and mix the ingredients. Add chilled minced meat and mix again until smooth.
Step 5
We moisten our hands with water and sculpt not very large cutlets from the resulting mass. In a frying pan that can be used for the oven, heat lard or vegetable oil. Fry lazy sorcerers on both sides over high heat to form a golden brown crust.
Step 6
Mix sour cream with half a glass of water, add a little salt. Fill the sorcerers with this dressing and send it to an oven preheated to 180 degrees for 15-20 minutes. We serve delicious sorcerers hot.
