This crunchy sweet delicacy cannot leave anyone indifferent. This yummy is called kozinak. This is perhaps one of the few sweets that pleases not only with a stunning taste, but also with various useful substances that are found in abundance in seeds and nuts.
Initially, it was customary to make kozinaki only from nuts and honey; these are the ingredients you will need to make homemade Georgian kozinaki. Today, other varieties of this sweet can be found on store shelves, for example, sunflower seed kozinaki. Another delicacy is made from the same seeds - halva.
In general, sunflower seeds are a very familiar product for the Russian consumer, but walnuts in kozinaki are a luxury. Usually, instead of honey, caramel is used in the preparation of "Russian" kozinaki. In fact, kozinaki can be made in different ways: from peanuts, pine nuts, from cereals, with the addition of raisins or chocolate. There is only one condition that is always observed: kozinak is a sweet, dense tile that is so pleasant to crunch. Of course, if you decide to try making homemade kozinaki, then it is logical to start with the Georgian classic recipe.
Traditional Georgian Kozinak
To prepare traditional Georgian kozinaki, you will need:
- 0.5 kg of honey;
- 0.5 kg of walnuts;
- 2 teaspoons of sugar
The walnuts should be thoroughly chopped and then fried, without the need for oil. Now mix honey and sugar in a saucepan, then put it on low heat, do not forget to stir the mixture constantly, this is very important. When the honey comes to a boil, remove it from the heat and let it cool, then start heating again. The future honey syrup should be brought to a boil three times. The last time, do not let it cool down, immediately pour chopped nuts into a saucepan, then cook this "potion" for about ten minutes more.
Then take a clean board and dampen it with cold water. Place the contents of a saucepan on the surface of this board. At this point, you will need a rolling pin; for convenience, it should also be wetted. The future kozinak needs to be quickly rolled out, there is no need to hesitate, otherwise the honey syrup will freeze and you will not succeed. That's all, now you can cut the cooked Georgian kozinak into pieces and serve. Your loved ones will be delighted with such a luxurious sweetness.
