Cherry was not chosen by chance as an ingredient for homemade wine. Grapes in most of our country cannot fully ripen due to the inappropriate climate. Cherry is ubiquitous and after grapes is considered the best option for private winemaking.

Cherry wine has an excellent bouquet, tart taste and delicious aroma. Homemade cherry wine is easy to ferment and clarify. As a rule, varieties of ordinary and sour cherries are used for it. Many winemakers prefer to take small, steppe cherries or sweet and sour fruits, they are the easiest to process and will suit any recipe.

It is best to use fully ripe dark-colored cherries for cherry wine. It should be borne in mind that with very sweet or overripe cherries, the wine can become non-aromatic and tasteless. It is also not advisable to make wine from very unripe fruits - it will noticeably sour.

To make your own cherry wine at home, you must strictly follow the algorithm. Soak the collected ripe fruits in the refrigerator for 3 days.

Then take out the cherry, soak it in water, remove the seeds and pour the juice from the berries with water for a day. This is necessary so that the dense berries are saturated with water and give off the wort after pressing. If you want a light bitter almond flavor in the wine, leave a few cherry pits, they will make the taste of the drink more piquant.

After wringing out the wort, if you wish, you can add fruits of other berries to the wine - for example, plums, raspberries or black currants. After pressing, add wine yeast to the wine and leave the resulting composition for 10 days to ferment. After the time has elapsed, remove the sediment, add sugar, alcohol and let the wine stand for another 10 days. After that, filter the wine several times and bottle it, seal the container hermetically.

Due to the fact that cherries contain little sugar and a lot of acid, more sugar and water will have to be added to its freshly squeezed juice. In this case, the homemade wine will be fortified and sweeter.

To obtain wine from cherries according to this recipe, you will need one volumetric vessel such as a barrel or bucket for fermentation of the drink and several three-liter cans for the subsequent storage of the finished wine. It is worth choosing a large vessel for fermentation of cherry wine, since the mass during the ripening process will foam strongly and rise to the edges of the vessel. It is necessary that the wort in the dishes occupies no more than 70% of the total volume.

Fermentation vessels must have a lid so that it is possible to block the access of oxygen, and a wide throat for easy stirring of the wort. Containers for winemaking can be made of glass, food grade plastic, stainless steel or enamelled. An oak barrel is ideal, but it is not easy for beginners to adapt to, so if you are cooking for the first time, it is worth taking a different dish.

The walls of the containers should not be transparent, as the wine does not tolerate sunlight. Therefore, it is better to wrap glass vessels, even made of dark glass, with a dense material, for example, a felt cloth. In addition, this will protect the cherry wine from temperature extremes.

Prepare the cherries: remove the seeds, mash the berries. Pour the resulting mass with purified water, squeeze. Transfer the resulting liquid to a large container using a latex glove on top of the neck. After a few days, the fermentation process will begin, which will last about 1 month. During this period, place the container with the wort in a warm and dark place.

When the glove deflates (air comes out of it), and the mass stops bubbling, open the container and taste the resulting drink. If the wine is moderately sour and sweet, then it is ready. If you plan on storing this homemade cherry wine throughout the winter, add 500 ml of vodka or 40% alcohol to it. The strength of the drink, of course, will increase, but this way you are guaranteed to avoid souring.

This cherry table wine recipe is considered very simple and perfect for those new to winemaking. However, the prepared drink is in no way inferior in its taste to more complex options. The bouquet of this cherry wine will be subtle and rich, which will delight not only the creator.

Prepare the cherries: rinse the berries by removing sticks and other debris, remove the seeds from the cherries, trying to minimize the loss of juice. Boil water, pour boiling water over the prepared berries in a huge fermentation bottle.

Tie the neck of the container with gauze and keep the wort in a dark and warm room for several days until fermentation. When the mass starts to sizzle, foam, rise, strain the thick with cheesecloth or a sieve to filter out the remnants of the berries.

Squeeze the juice from two medium-sized lemons, watch out for the seeds. Add juice to wine along with sugar. Stir the drink so that all components are completely dissolved in it.

Transfer the finished wort into a fermentation vessel, close the neck on top with a rubber glove with a small hole on the finger. Place the cherry tincture in a dark room for 2-3 weeks, the ripening temperature should be about 20 degrees. Stir the grounds daily to avoid creating acidic vinegar zones.

When the glove is deflated, sediment will deposit in the bottle, and the cherry wine will take on a light shade. At this point, strain the homemade drink again through a fine sieve or several layers of gauze and finally pour the wine into bottles, tightly closing them with corks. This cherry wine turns out to be low-alcohol, and it can be stored for no longer than a year in a cool place and without access to light, for example, in a cellar.
