It is necessary

    • small and medium tomatoes about 2 kg;
    • spices: basil
    • rosemary;
    • sea or common salt;
    • vegetable oil;
    • a couple of heads of garlic.

Instructions

Step 1

Choose small tomatoes, so they will get to the right condition faster when cooking (ladies' fingers are great). Wash and dry the tomatoes. Next, cut them in half, remove the seeds with a spoon, so that only thick fleshy walls remain. The leftover pulp can be used as a pizza sauce or in soups.

Step 2

It is necessary to dry tomatoes in the hot sun, but in the absence of it, use the oven. Preheat it to 130 degrees. Now place the tomatoes tightly together on a baking sheet. The baking sheet can be lined with foil or baking paper in advance to prevent the tomatoes from burning. Then sprinkle the tomatoes with coarse sea salt, aromatic herbs, and ready-made seasoning, for example, Provencal herbs, or dried rosemary, basil, thyme. Sprinkle with ground pepper on top, brush with olive or sunflower oil and place in the oven.

Step 3

Dry the tomatoes at about 130 degrees for about five hours with the oven door ajar. When the tomatoes are dried, they will decrease in size and dry out. But at the same time, they must remain flexible, and not dry. After five hours, remove the tomatoes and refrigerate. Leave a portion for a snack, the remaining portion can be canned.

For preservation, place the tomatoes in sterilized jars. Stack tightly, sprinkling with fragrant dried herbs and slices of fresh garlic between layers. When the jar is full, fill it completely with oil. Choose olive oil best. If you want to use sunflower oil, then you can use it too, in the end the dish will still turn out fragrant and tasty. Sun-dried tomatoes are ready.

For drying tomatoes, you can use a special device - a dryer for berries and fruits. You can also air-dried tomatoes.
