Step 1

Drying prunes at home is not difficult at all. Take fresh plums of the varieties Stanley, Hungarian ordinary, Hungarian Italian, Naroch, Crooman, Renklod Altana. Rinse the fruits well in running water. Carefully remove the seeds from large plums. Small plums can be dried with seeds, but be careful in the future: it is not easy to remove the bone from the finished prune.

Step 2

Make a baking soda solution: mix it in proportions of 15g per liter of water. Heat the solution and dip fresh washed plums into it for a minute. Then remove the fruits, rinse in cold water and spread evenly on a baking sheet. Let the plums air dry for 1 to 2 hours.

Step 3

Place the dried plums in a metal sieve or colander and dry in the oven or hot dryer. It is necessary to carry out the procedure for preparing prunes in 3 stages. The first stage will take 3-4 hours. Dry prunes at 40-45 degrees. Remove the fruit from the dryer and let it air out for 3-5 hours.

Step 4

The second stage of prune preparation lasts 4-5 hours. Dry the prunes in an oven preheated to a temperature of 55-60 degrees. Then refrigerate the fruit again in the air for 3-5 hours.

Step 5

The third stage completes the drying of the prunes. Place the dried fruit in the oven for 12-16 hours, maintaining the temperature at 75-80 degrees.

Step 6

The second way to dry prunes at home will require less effort on your part. Rinse the plums well and place them in a colander.

Step 7

Prepare a solution of baking soda in proportions of 1 tablespoon per liter of water. Place a colander with plums in this solution and let the liquid boil.

Step 8

Rinse the plums in cold water. Spread them on a baking sheet and dry in a way convenient for you: in the oven at 50 degrees or just in the sun. If you've dried your prunes properly, they should be firm but solid (i.e. not crumbly). Soak prunes in clean water before use.
