Tiramisu is one of the most popular desserts in Italian cuisine. Its name translates literally as pull (tira) me (mi) up (su) or lift me up. This multi-layered dish is prepared from mascarpone cheese, savoyardi cookies, esperesso coffee, and Amaretto liqueur. The composition of the classic tiramisu necessarily includes cocoa powder, which is used to powder the finished dessert.

It is necessary

  • For classic tiramisu:
  • - 80 g of icing sugar;
  • - 3 egg yolks;
  • - 250 g mascarpone cheese;
  • - 120 g savoyardi cookies;
  • - 3 tsp instant coffee;
  • - 1 tbsp. l. cocoa powder;
  • - 4 tbsp. l. liqueur Amaretto.
  • For tiramisu with cottage cheese:
  • - 300 g of fat cottage cheese;
  • - 150 g biscuit cookies;
  • - 2 tbsp. l. sour cream;
  • - 3 tbsp. l. icing sugar;
  • - 1 tsp. instant coffee;
  • - 1 tsp. cocoa;
  • - 1 bag of vanilla sugar.
  • For tiramisu with raspberries:
  • - 500 g mascarpone cheese;
  • - 250 g raspberries;
  • - 18 pcs. savoyardi cookies;
  • - 5 guinea fowl eggs;
  • - 100 g of icing sugar;
  • - 30 g vanilla sugar;
  • - 4 tbsp. l. instant coffee;
  • - 2 sticks of cinnamon;
  • - 60 ml of Amaretto liqueur;
  • - 10 g of cocoa powder;
  • - 6 stems of mint.

Instructions

Step 1

Classic tiramisu

Pour instant coffee with a glass of boiling water. Cool and pour into a deep bowl. Add Amaretto to your coffee. Beat egg yolks with powdered sugar until it is completely dissolved. Then gently, stirring constantly, add mascarpone cream cheese into the egg mass and beat thoroughly until smooth. Dip the Savoyardi cookies in the coffee mixture and sprinkle generously with the cheese mass. Then place the cookies close to each other and on top of each other in a portioned bowl or on a deep dish. Cover the tiramisu with the remaining cheese cream, smoothing over the top layer. Then cover the dessert with cling film and refrigerate for at least 5 hours. Then, freeing the tiramisu from the film, sprinkle it with cocoa powder and serve.

Step 2

Tiramisu with cottage cheese

Rub the cottage cheese through a sieve, then whisk in a blender along with sour cream, powdered sugar and vanilla until smooth. Pour a teaspoon of instant coffee with 5 tablespoons of boiling water, stir and cool. Very quickly, so as not to get wet, dip the biscuits in the cooled coffee and place them close to each other in the mold. Spread the curd cream evenly on top, then another layer of cookies, which are also generously covered with cream. Then cover the terramis with cling film and place for 5 hours in the refrigerator or for 20 minutes in the freezer. Then remove the film, sprinkle the dessert with cocoa powder and serve.

Step 3

Tiramisu with raspberries

Separate the yolks from the whites and beat separately: the whites - into a cool foam, and the yolks, along with the powdered sugar, until white. Place the creamy mascarpone cheese in a deep bowl, add the vanillin and stir well. Then carefully add the whipped whites and yolks to the curd. Whisk all ingredients again until smooth. Pour boiling water over ground coffee and cinnamon sticks. Let the coffee brew and cool. Break the savoyardi cookies in half and distribute them in 6 serving bowls. Pour 10 milliliters of Amaretto and 40-50 milliliters of cinnamon coffee over each serving. Then brush the cookies with cheese cream and refrigerate the tiramisu for 3-4 hours. After this time, sprinkle the finished dessert with cocoa powder, garnish with raspberries and mint sprigs.
