Recipe 1. With garlic and carrots
Peel a small head of cabbage from dirty leaves and stumps, finely chop, transfer to a cup. Add 5 grated carrots and 4 garlic cloves. Mash it well with your hands so that the juice appears. Pour in brine prepared from a liter of clean water, 2 tbsp. tablespoons of salt, 1 tbsp. granulated sugar, half a glass of 5% vinegar and 3 tbsp. tablespoons of vegetable oil. Mix everything again. Cover with a dense material or a lid, put in a dark place for a day. Transfer to banks, roll up.
Recipe 2. With sweet pepper
Grind 2.5 kg cabbage, 2 medium carrots, 3 garlic cloves and 1 bell pepper. Mix everything well. Put on the bottom of a three-liter jar. Add 7 peppercorns and 3 lavrushka leaves. Pour everything with brine made from 1.5 liters of water, 2 large tablespoons of fine salt, 100 ml of 9% vinegar and 1 tbsp. tablespoons of granulated sugar. Immediately roll up and put under a warm blanket to cool down. Then use it for cooking or transfer to the cellar.
Recipe 3. With nutmeg
Grind 1 kg of cabbage, 3 carrots, 2 bell peppers. Pour everything into a large saucepan. Throw 4 peppercorns and 3 lavrushka leaves there, add 1/4 of the chopped nutmeg. Mix well. Pour a brine made from 300 ml of boiling water, the same amount of 4% apple cider vinegar and 2 tbsp. tablespoons of fine salt. Stir again, press down with a load (an inverted plate or a piece of brick), leave for 6, 5 hours. Arrange in clean jars and roll up with sterilized lids. Place on the bottom shelf or refrigerator door for storage.

According to the lunar calendar, it is better to salt cabbage for the winter on women's day, for a growing month, or a few days after the full moon. In this case, it will turn out to be the most crunchy, tasty and aromatic. It can stand until spring.
