Instructions
Step 1
First you need to prepare the fish and brine, in which it will then be salted. For the brine, pour water into a saucepan and let it boil. As soon as the water boils, salt, sugar are poured into the pan, pepper grains, coriander and bay leaf are added. The brine should be brought to a boil again, boiled for 1-2 minutes and removed from heat. The finished brine is left to cool to room temperature.
Step 2
While the brine is cooling down, they begin to process the herring. If the fish has been frozen, then it should be thawed. However, you do not need to do this in an extreme way, for example, in the microwave or under hot water. Considering that only fish with firm flesh is suitable for salting, the best way to defrost it is to let it thaw at room temperature. The fish ready for salting is washed and, without cutting off the head or tail, the gills are carefully removed.
Step 3
The washed fish should be placed in a salting container. This can be a deep bowl with a lid, a ceramic dish, or even a plastic bottle. The herring should be in the brine for at least a day. The maximum time you can leave the fish in the brine is 7 days. If in a week they did not have time to eat all the fish, then the herring must be removed from the brine, cut into portions and filled with a small amount of vegetable oil.
