For this, the Japanese use rice vinegar - it kills unwanted bacteria.

When faced with a lack of rice vinegar on store shelves, don't despair. In fact, you can find a worthy replacement for this ingredient. At the same time, your dishes will not lose their taste. One option is to replace the rice vinegar with regular vinegar. However, do not forget that its amount should be less, otherwise sushi and rolls will have a too strong, unpleasant smell.

The optimal result in choosing a replacement for rice vinegar can be achieved by using some recipes and little tricks. Take 4 tablespoons of grape vinegar, 1 teaspoon of salt, and 3 teaspoons of sugar. Mix all this thoroughly and heat over low heat until all components are completely dissolved. Remember that the vinegar should never boil.

There is another recipe that can help out a lover of Japanese cuisine in difficult times. Mix 1 tablespoon of apple cider vinegar with 1 teaspoon of sugar, 1/2 teaspoon of salt, and a tablespoon of water. Make sure all ingredients are well dissolved.

As a last resort, when you have nothing but ordinary vinegar at hand, you can use it as well. Take 50 ml of soy sauce, 20 g of sugar and 40-50 ml of the most common 6% table vinegar. Of course, all these components must be thoroughly mixed. If you are a lover of soy sauce, then this option may be the best one for you. Do not think that this substitute for rice vinegar will ruin your meal, it is not at all true. Feel free to experiment and you will succeed.

You can achieve a good result without even using vinegar at all. Just take lemon juice, combine with a little sugar and soak rice with this mixture. Believe me, this is a wonderful marinade for rice. Your guests may not even feel the lack of rice vinegar.

If your time is not limited, try making your own rice vinegar. To do this, pre-hold the rice for several hours in a closed container with water, then send it to the refrigerator overnight. Strain the grains in the morning. For each glass of the resulting liquid, add three quarters of a glass of sugar. Cook the resulting mixture in a water bath for about 20 minutes. Let the mixture cool and add yeast (1/2 teaspoon per liter). After a few days, when the bubbles on the surface of the liquid disappear, pour it into another container. After that, please be patient. In about a month, homemade rice vinegar is ready.
