Cucumber salad with radish sprouts
Wash, peel and cut the cucumber and carrots with a slicer or knife into thin longitudinal slices. Wash green onions and chop finely. Put mayonnaise on a plate as a base, put slices of cucumber and carrots on top, twisting into rolls, add radish sprouts to the vegetables. Sprinkle salad with green onions and sesame seeds, salt and serve. Sprinkle with lemon juice if desired.

Cold cucumber soup with yogurt
Wash cucumbers, dry, peel and cut into large pieces. Peel the garlic, wash the herbs under running water and dry. Put cucumber pieces, garlic, dill, parsley and unsweetened yogurt in a blender, add salt and beat until smooth.

Lightly dry the slices of bread in a frying pan and brush a little with mayonnaise. Transfer the soup to portioned plates, garnish with mint sprigs and serve with croutons. For a refreshing effect, refrigerate the soup before serving.
