Khachapuri is a Georgian cuisine dish. This is a tortilla with cheese, meat or steamed fish. The cakes can be different in shape: triangular, round, oval, someone prepares khachapuri in the form of a boat. Dough for tortillas is traditionally made without yeast, but you can also cook it with yeast or kefir.

It is necessary

  • For five servings:
  • - 700 g of wheat flour;
  • - 700 g of cheese;
  • - 500 ml of kefir;
  • - 100 g of butter;
  • - 4 tbsp. tablespoons of vegetable oil;
  • - 1 teaspoon of sugar;
  • - salt to taste.

Instructions

Step 1

Knead a soft dough from flour, sugar, salt, kefir and vegetable oil. The dough should turn out like for pies. Now make a small cake out of the finished dough, sprinkle with baking soda, knead, repeat the procedure three times. Sprinkle the dough with flour, cover with cling film, put in a warm place for an hour.

Step 2

Rub the cheese on a large grater. For khachapuri, Georgian cheese suluguni is suitable.

Step 3

Divide the dough into 5 portions, roll each into a flat cake. Place cheese and some butter in the middle of each. Gather the dough over the filling, pinch. Place the "bag" seam down on the work surface, roll to the size of the pan.

Step 4

Now transfer the khachapuri to a dry skillet, bake under the lid. The bottom of the cake should be reddened, then turn it over, bake the khachapuri until cooked, without covering it with a lid.

Step 5

Lubricate ready-made Georgian khachapuri on kefir with butter. Best served hot.
