You will need:

  • 2 tbsp. tablespoons of olive oil,
  • 400 grams of chicken breasts (skinless)
  • 250 grams of a mixture of vegetables, carrots, beans, and mushrooms,
  • 120 grams of canned pineapple pieces (drain the juice into a separate bowl),
  • 3 tbsp. tablespoons of chopped peanuts.

For the sauce:

  • 2 tomatoes,
  • 1 carrot,
  • 1 shallot
  • 30 grams of dates,
  • 2 tbsp. tablespoons of tomato paste,
  • 120 ml pineapple juice.

Let's prepare the sauce first. Put two tomatoes (peel off), carrots, shallots, dates (remove seeds), tomato paste and pineapple juice in a food processor or blender and grind until smooth. We spread it in any container and set it aside.

Heat the olive oil in a saucepan, send the chicken breast cut into small pieces into it, and fry for 3-4 minutes, until the meat is browned.

Wash the carrots, peel and finely, wash the mushrooms under running water and also finely chop them. Add chopped vegetables, pineapple pieces and sauce to the meat, and simmer, stirring occasionally, until the chicken and vegetables are ready.

Sprinkle with chopped peanuts before serving.
