To prepare a festive salad with squid and cucumber, you will need: 200 g of squid, 100 g of oyster mushrooms, 3 fresh cucumbers, 200 g of peeled shrimp, 1 onion, 2 cloves of garlic, 2 tbsp. l. lemon juice, 3 tbsp. l. olive oil, 3 tbsp. l. sour cream, 2 eggs, 1/2 tsp. Worcestershire sauce, salt, black pepper, green onions.

You can use frozen seafood for cooking, in this case, defrost squid and shrimp at room temperature before cooking, do not defrost food in the microwave.

In order to prepare such a salad, first of all prepare the squid. Rinse the product under cold running water, if necessary, remove the entrails and chord. Next, scald the squid with boiling water, place in a saucepan, fill with cold water, salt and boil the seafood until cooked. Rinse, peel and boil the shrimp as well. Place the prepared ingredients in different containers and let them cool down to room temperature. Next, finely chop the boiled squid.

Unlike poultry and animal meats, squid have weak fibers, so they take little time to cook. To cook squid for salad, it is enough to dip it in water for 1-3 minutes, depending on the size of the carcass.

Peel the onions and chop them finely. Take oyster mushrooms, rinse them thoroughly. Pour a small amount of vegetable oil into the pan and heat over medium heat. When the pan is hot enough, place one half of the chopped onion and mushrooms on it, and fry the ingredients until cooked through. Scald the other half of the onion with boiling water.

Boil chicken eggs, then cool them in cold water. Peel and cut into cubes. Wash the cucumbers, dry them with a kitchen towel, and cut them into small cubes just like the eggs. Now that all the ingredients for making your holiday salad are ready, make a delicious dressing sauce for the dish.

Take a small bowl and combine the olive oil, Worcestershire sauce, sour cream, lemon juice, garlic, salt, and black pepper. Mix the ingredients well until smooth. Using a fine grater, grate the lemon zest, leave it to decorate the salad. Chop green onions finely.

Take a salad bowl and place in it chopped squid, shrimp, oyster mushrooms with fried onions, scalded onions, eggs and cucumbers. Season the salad with the resulting sauce, salt and pepper if necessary, mix the ingredients well. Garnish the top of the salad with a little lemon zest and chopped green onions. Refrigerate for 2 hours.
