This Mediterranean sauce is quick and easy to prepare and tastes much better than the original one. Aioli is ideal with meat or poultry, as well as a dressing for salads and hamburgers.

- 1 yolk
- 2 cloves of garlic

- 50 ml refined vegetable oil
- 50 ml extra virgin olive oil

Step 1
All sauce ingredients must be at the same temperature. Separate the yolk from the protein, finely grate the garlic. Mix vegetable and olive oil.
Step 2
Put yolk, garlic in a bowl, add a pinch of salt and pepper. Stir in one direction with a whisk and start adding oil drop by drop.
Step 3
When the sauce begins to thicken, add the remaining butter in portions without ceasing to interfere. The sauce should be smooth and thick.
Step 4
