Step 1

Cut the potatoes into thin slices, strips, or small cubes. Rinse it off with cold water and then place it on a paper towel to drain the water and remove excess starch. So during frying, the potatoes will be covered with an even crispy crust, and inside they will remain tender, soft. Do not salt the potatoes before frying, as this will cause the pieces to clump together.

Step 2

When the sliced potatoes are dry, prepare the deep fryer. For frying potatoes, you can use refined vegetable oil or animal fat, or you can mix them in half. Fill half of the fryer's container with fat or oil. Having done this, heat the fat to 190 degrees.

Step 3

When the fat is well warmed up, you can run the first batch of potatoes into it. Calculate the proportions as follows: 1 part potato to 4 parts fat. This is necessary so that the potatoes float freely in the fat and do not stick together.

Step 4

After the potatoes are fried until golden brown, they should be removed from the fryer using a slotted spoon. After that, start frying the second portion in the deep fryer and so on.

Step 5

Place the fried potatoes on a paper towel for a few minutes to drain off excess fat.
