Duck meat is considered quite fatty and satisfying, so it is better to serve slightly sour sauces on the table. These sauces work well together, providing an opportunity to enjoy the delicious taste and spicy aroma of the prepared dish.

It is necessary

    • Recipe number 1:
    • fresh or frozen cranberries - 350 g;
    • orange juice - 6 tbsp spoons;
    • sugar -4 tbsp. spoons.
    • Recipe number 2:
    • oranges - 2 pcs.;
    • orange liqueur - 0.5 cups;
    • brown sugar -0.5 cups;
    • red wine vinegar - 1 tbsp;
    • dry thyme -1 pinch;
    • salt;
    • water - 0.5 cups.

Instructions

Step 1

Recipe number 1.

Cranberry Sauce.

Rinse the cranberries under cold water, transfer to a saucepan with a thick non-stick bottom, put on the stove and turn on low heat. If you are using frozen cranberries, thaw them first.

Step 2

Once the cranberries have boiled, add orange juice to them. Mix the resulting consistency thoroughly, bring to a boil again and leave to cook for 15-17 minutes.

Step 3

Remove the pan from heat, cool slightly and rub the cranberries through a sieve. Pour sugar into the resulting mass, put it back on the stove and simmer over low heat until the sugar dissolves in the sauce.

Step 4

It is always better to serve the sauce in a separate bowl, after cooling it down.

Step 5

Recipe number 2. Orange sauce.

Wash and peel the oranges.

Step 6

Cut the zest of one orange into thin strips about one centimeter long. Rub the zest of the second on a fine grater and set aside.

Step 7

Squeeze juice from two peeled oranges manually or using a juicer.

Step 8

Take a small saucepan (you can also use a frying pan), pour wine vinegar into it and add sugar. On low heat, bring the sugar to the state of "caramel", making sure that it does not burn.

Step 9

Add squeezed orange juice, orange liqueur, grated zest and dry thyme to the mixture.

Step 10

Boil half a glass of water in a small container. Add the orange peel, cut into strips, bring to a boil and cook for 5 minutes. Drain the boiled straws in a colander, drain the water, and then put in the sauce. Salt and pepper to taste.

Step 11

Serve the resulting sauce hot.

Bon Appetit!
