Braised duck is fragrant, tender, tasty, especially when cooked with juicy foods, aromatic spices and herbs. The latter are thyme, basil, parsley and dill.

It is necessary

  • - processed duck (2, 5 kg);
  • - 2 tablespoons of honey;
  • - 1 bunch of thyme;
  • - 1 piece of ginger;
  • - 1 kg of broccoli;
  • - salt pepper;
  • - 100 g of butter;
  • - 250 ml of vegetable broth;
  • - 2 tablespoons of sour cream;
  • - 1 carrot, 2 onions;
  • - 1 stalk of leeks;
  • - 150 g cherries (from compote);
  • - 250 ml of dry red wine;
  • - 1-2 teaspoons of starch;
  • - 1 tablespoon lemon juice;
  • - 2-3 tablespoons of soy sauce;
  • - 1-2 teaspoons of starch;
  • - 4 tablespoons of almond "leaves";

Instructions

Step 1

Wash the duck and pat dry. Rinse the thyme with water, shake off the drops and tear off the leaves from two branches, chop finely. Peel the ginger and finely grate. Stir in thyme, ginger, lemon juice, soy sauce, and pepper. Brush this mixture onto the duck.

Step 2

Place 1-2 sprigs of thyme in the duck, tie the wings and legs to the body. Peel the onion and cut into cubes. Coarsely chop the carrots. Chop the leeks into wide rings. Pour broth and wine into a saucepan, add vegetables and remaining thyme.

Step 3

Place the duck breast-side down in the liquid, cover the saucepan with a lid and place in the oven at 200 ° C. Simmer for about 1 hour, after the start of braising, turn the duck after 30 minutes.

Step 4

Mix 2 tablespoons of the sauce with the honey. Brush the duck with the prepared liquid and keep in the oven without a lid for another 40 minutes. Boil broccoli over low heat for 5 minutes. Or cook in a double boiler for 10 minutes as more vitamins are stored. Fry the almonds in hot butter.

Step 5

After removing the duck from the saucepan, put it in a warm place. Strain the sauce formed during frying, remove the fat from it, put the cherries in the sauce and simmer them over low heat for 10 minutes.

Step 6

Season with soy sauce, pepper and lemon juice. Season the sauce with starch diluted in cold water. Add sour cream. Serve the duck with the sauce, broccoli and almonds. Serve potato pancakes as a side dish.
