Squids have a fairly neutral taste, which makes it easy to combine them in salads with different ingredients. In addition, they are low in calories: only 75 kcal per 100 g of product.

It is necessary

    • 500 g squid carcasses;
    • 4 eggs;
    • 100 g of cheese;
    • 300 g champignons;
    • 1 onion;
    • 2 apples;
    • 2 tbsp mayonnaise;
    • 2 tbsp sour cream;
    • 1 tbsp mustard;
    • salt
    • ground black pepper to taste.

Instructions

Step 1

Peel the squid carcasses. Scald them diligently with boiling water. Place the carcass on a cutting board and use your hand to remove the dorsal chord - a long, transparent strip - from the inside of the squid. Peel off the top outer and inner liner from the squid with a knife or hands. Then rinse the carcasses thoroughly.

Step 2

Boil the squid for the salad. To do this, put the squid carcasses in boiling slightly salted water. Add spices and some lemon juice if desired. After 30 seconds, turn off the heat, cover the pan and leave the squid in water for 5 minutes. Then drain the water and cool the squid a little. With this method of boiling, squids are tender and elastic. The main thing is not to overcook the meat, otherwise it will become "rubbery" and tough. If, nevertheless, the squid is overcooked, then put it on fire for another 30-40 minutes. The carcasses will become soft again, but will decrease in size by half.

Step 3

You can cook squid salads with various sauces and dressings. Try not to add too many spices, especially garlic, to only emphasize the flavor of the seafood itself. Squids go well with cheese, lemon, mushrooms, nuts, eggs, shrimps, fresh and canned vegetables - pepper, cucumber, corn, green peas, herbs.

Step 4

Boil the eggs until steep for about 9-10 minutes. Separate the boiled whites from the yolks. Grate the proteins on a coarse grater or chop finely. Peel apples and seed pods. Grate apples and cheese coarsely. For a salad with squid, any cheese is suitable - both hard varieties, and even processed. Cut the squid into small strips. Cut sweet onions into thin half rings. Fry the peeled walnuts in a dry skillet. Then chop them at your discretion - either into large pieces, or crush them into small crumbs.

Step 5

Rinse the mushrooms in cool running water. Cut into strips and sauté with a little vegetable oil. Discard the cooked mushrooms in a colander and let the excess oil drain.

Step 6

Prepare the sauce. Chop the yolk with a fork into lump-free crumbs. Combine thick mayonnaise, sour cream, mustard and yolk. You can also add a few drops of lemon juice for sourness.

Step 7

Combine squid, mushrooms, protein, onions, nuts, cheese and apples. Season the salad with the sauce. Season with salt and pepper to your liking. Top with fresh herbs.
