Chicken stewed with zucchini in tomato sauce is a delicious and healthy dinner for the whole family. Zucchini is rich in vitamins and trace elements, is easily digestible and is a good addition to tender chicken meat.

- - 1-2 young medium-sized zucchini;
- - 1-2 onion heads;
- - 3 cloves of garlic;
- - 2 tablespoons of tomato paste (tomato juice);
- - 3 tablespoons of soy sauce;
- - vegetable oil;
- - salt, spices - to taste;
- - greens (parsley, dill, cloves, etc.) - to taste;

- - frying pan.
Instructions
Step 1
Rinse the chicken fillet (you can use the thighs or chicken drumstick), remove the films, dry and cut into small even pieces. Rub each piece with seasoning. Marinate the chicken in soy sauce and let sit for 20-30 minutes.

In the meantime, wash the zucchini, peel, seed, rinse again and cut into thin but large pieces. For the preparation of this dish, choose only young zucchini: the younger they are, the tastier and more tender. Peel the onion and garlic, rinse with water and dry. Pass the garlic through a garlic press until a homogeneous mass is formed, cut the onion into thin rings.

Heat a deep frying pan with vegetable oil, add the onion and garlic, stir and fry over low heat, stirring occasionally until the food is soft and golden brown.
Step 4
In the future, put the prepared chicken in the pan and continue to fry along with the onions and garlic until the chicken changes color and turns white. This should take about 7-10 minutes.
Step 5
Add the diced courgettes to the dish, stir in the chicken, and fry for another 5 minutes.
Step 6
At this time, pour warm boiled water into a glass and dilute the tomato paste in it, mix well until a homogeneous consistency. Alternatively, you can use regular tomato juice instead of the tomato paste prepared in this way.

At that moment, when the zucchini in the pan begins to soften a little, pour in the tomato sauce and mix the products well.

Then add salt and pepper (to taste) and any herbs of your choice (dill, parsley, onion, etc.) to the dish. Pre-chop the greens. When adding salt, remember that the soy sauce in which the chicken was marinated already has enough salt.

Cover the skillet with a lid, turn the heat on and simmer the chicken and zucchini for another 10 minutes. Chicken stew with zucchini is ready!

Sprinkle the finished dish with chopped herbs on top and serve hot. You can use boiled potatoes or rice as a side dish.
