- carcass of one chicken;
- half a chicken or chicken for broth;
- 3-4 large onions;
- 2 cups chicken stock
- 2 bay leaves;
- 5 peas of allspice;
- salt.
Instructions
Step 1
Choose a “mature” chicken (about 18 months old) for stewing. Distinctive features of an adult chicken will be as follows: the meat is yellowish, like the skin. The skin will always be thicker and oily than the chicken's.
Step 2
Boil separately prepared chicken or chicken meat for the broth in advance, using traditional spices.
Step 3
Divide the prepared chicken for stewing into portions familiar to you, salt.

Prepare some convenient cooking utensils for stewing. The best option is a cast iron duck. Its metal heats up slowly, but then it keeps the temperature necessary for extinguishing very well.
Step 5
Place the chicken pieces on the duck.
Step 6
Pour ready-made chicken broth into a container with meat, put on fire, bring to a boil. Remove the foam that appears in time.
Step 7
Cut the onions into slices and add them to the chicken pieces. Simmer until tender.
Step 8
At the end of braising, add bay leaf and allspice.
