- 4 small squash or zucchini
- 3 tbsp. tablespoons of sunflower oil
- For filling:
- 300 g chicken fillet
- 1 cup white rice
- 1 onion
- 1 carrot
- 100 g cheese
- ½ cup sour cream
- 1 clove of garlic
- 3 tbsp. tablespoons of sunflower oil
- salt
- pepper
- greens.
Instructions
Step 1
Wash the zucchini, cut into rings with a diameter of about 15 cm. Remove the core from the zucchini with a teaspoon. Get cups.
Pour sunflower oil into a baking dish and put cups of zucchini. Preheat the oven to 220 degrees and bake the zucchini for 30 minutes.
Step 2
Preparing the filling for zucchini. Pour some sunflower oil into a preheated frying pan. Put finely chopped zucchini pulp and washed rice in a frying pan, simmer with the lid closed for about 5-7 minutes. Meanwhile, cut the chicken breast into small pieces, grate the peeled carrots on a coarse grater and chop the onions. Add all the ingredients to the rice and zucchini mixture, season with salt and pepper to taste. Stirring constantly, simmer the filling until cooked for about 15 minutes.
Grate cheese on a fine grater, mix with sour cream and chopped garlic.
Step 3
Remove the squash cups from the oven and fill with the finished filling. No need to pile up the filling with a slide. Put 1 teaspoon of the cheese mixture on top of the stuffed zucchini and put the zucchini back in the oven for 5 minutes. Bake until cheese is golden brown.
Garnish with herbs before serving.
