Roast, cooked with eggplant, potatoes and chicken, turns out to be incredibly tasty and aromatic. To prepare it, you will need quite simple products that are sure to be found in any kitchen. The result is a very satisfying and appetizing dish that absolutely everyone will like.

Ingredients:

  • 6 chicken drumsticks;
  • 2 onions;
  • ripe tomatoes - 5 pieces of medium size;
  • 3 garlic cloves;
  • 600 g potatoes;
  • eggplant - 3 pcs;
  • 1 carrot;
  • hot pepper pod (optional);
  • 1 tbsp. suneli salt and hops;
  • 3 tbsp sour cream;
  • 1 tsp paprika (sweet);
  • sunflower oil.

Preparation:

  1. First you need to wash the meat and pat dry using paper towels. Then the legs are thoroughly rubbed with a mixture of spices and left for 50-60 minutes in a cool place to marinate.
  2. Then rinse the eggplants well. With a sharp knife, they are cut into circles of sufficiently large thickness. Then a little salt is added to the vegetables and everything is mixed.
  3. Onions and carrots must be peeled, washed and chopped. For this, the onion is cut into very small cubes with a sharp knife, and the carrots are chopped with a coarse grater. Scald the washed tomatoes with boiled water and remove the skin from them. Then they should be cut into pieces. The pod of hot pepper should also be finely chopped.
  4. Put a frying pan on the fire and pour in the sunflower oil. When it gets hot, add the chopped onion. After it is slightly browned, add the carrots, and then the bitter pepper. With constant stirring, the vegetables should cook for 3-5 minutes.
  5. Then tomatoes are poured into the pan. The resulting mass is stewed until the liquid has evaporated by ½ part. At the very end, chopped garlic and salt are poured, everything is mixed well and the pan is removed from the heat.
  6. In the dishes in which the roast will be baked, you need to put potatoes peeled and cut into pieces of medium size in advance. On top of it, ½ part of the vegetables fried in a pan is laid out.
  7. The third layer is eggplants, which, like potatoes, are covered with stewed vegetables on top. The last layer is chicken drumsticks. But before placing the drumsticks on a baking sheet, they are coated with sour cream.
  8. The baking dish is covered with a lid and placed in the heated oven. The dish is baked at 180 degrees for about 60 minutes.
