Step 1

Before processing, the nuts must be peeled. Break them open with a hammer or special tongs. To make the strong shell more pliable, you can hold the nuts in the freezer before processing. If you need even halves of the nucleoli, proceed very carefully so as not to damage them.

Step 2

Free the kernels from shell debris and rigid internal baffles. After that, they can be blanched, freeing them from a thin, slightly bitter film. Place the peeled nuts in a deep bowl and pour boiling water over them. Let sit for a couple of minutes, drain the water and transfer the kernels to a hard towel. Rub them with your palms through the fabric - the thin film will quickly come off.

The nuts are now ready to roast. Place a large skillet over low heat. Scatter the nucleoli over it in a thin layer. Fry them for 15-20 minutes, stirring constantly with a silicone or wooden spatula. Make sure the nuts do not burn. If you need to process a lot of kernels, fry them in several stages.

Roasting can also be carried out in the oven. Spread the nuts on a baking sheet and place in the preheated oven. Fry the kernels for about 15 minutes. To see if the nuts are ready, try them. If you feel they are damp, continue frying. A couple of times the kernels laid on the sheet should be mixed.

It is equally convenient to process nuts in the microwave. Place them on a flat plate. Turn on the oven for 8-10 minutes. Note that microwaved kernels have a slightly different, more delicate flavor.
