There are many recipes for simple homemade baked goods that are prepared quickly and, moreover, from common and inexpensive ingredients. For example, kefir cookies are a good treat for tea or coffee. It can be made in a hurry if guests come unexpectedly. And the recipe is so simple that even an inexperienced chef can easily cope with cooking cookies.
In order to make cookies with kefir, you will need the following ingredients: about 500 grams of wheat flour, 1 cup of kefir, 1 egg, a piece of butter (about 100 grams), 3 full tablespoons of granulated sugar, 1 incomplete teaspoon of baking soda, a little jam, jam or condensed milk, vanillin - on the tip of a knife.
Sift the flour into a bowl or saucepan, add granulated sugar, baking soda and butter, and chop with a sharp knife until finely crumbled. Then slowly pour in kefir, add egg yolk, a pinch of vanillin, and knead the dough. It should turn out to be quite plastic and almost not stick to your hands. Divide the dough into two equal portions and place in the freezer for 30-60 minutes.
The butter, kefir and egg should be cold, so remove them from the refrigerator just before adding them to the flour container.
After cooling the dough, remove one part of it from the freezer, roll it into a layer and put it on a baking sheet covered with baking paper (you need to lightly grease it with some kind of fat). Using a tablespoon, apply a thin layer of jam, jam or condensed milk (also boiled) to the dough. Almost any jam is suitable: apple, apricot, plum, cherry, etc. Then remove the second half of the dough from the freezer, roll it into a layer and carefully cover the filling on top. You do not need to pinch the edges around the perimeter. Beat the egg white lightly and brush over the surface of your baked goods. You can also brush the surface with milk.
If the jam you want to use to grease the first layer is too runny, mix it with a little potato or cornstarch.
Place the baking sheet in an oven preheated to 180 - 200 ° C. Cookies take about half an hour to cook. Control the degree of doneness visually, as well as with a match or wooden toothpick. When the surface is hard enough, the cookie is ready. Remove the baked goods from the oven, cool slightly and cut into squares or rectangles. Sprinkle a little caster sugar, chocolate chips, coconut, or cocoa powder on top if you like. You will end up with a very simple but tasty treat that will surely please both your household and guests.
You can also make cookies without using eggs. To do this, beat a glass of kefir, add sugar to taste (about a glass) and 1 bag of baking powder. Whisk the contents with a blender until foam appears. Add 2 tablespoons of vegetable oil, a packet of vanilla sugar and shredded chocolate. Mix thoroughly, add flour (about 2 cups). Knead an elastic dough, wrap it with plastic wrap and place in the refrigerator for about half an hour. After the time has elapsed, roll it out, cut geometric shapes from the dough, sprinkle with sugar. Bake the cookies in the oven for 20 minutes at 180 ° C.
