You will need:
- 700 g cod fillet;
- 2 small onions;
- 200 g of carrots;
- 2 large tomatoes;
- 6 tbsp. tablespoons of refined vegetable oil;
- lemon juice;
- 2 tbsp. tablespoons of butter;
- salt;
- freshly ground black pepper.
Rinse the cod fillet, dry, cut into pieces. Finely chop the onion, peel and grate the carrots. Pour boiling water over the tomatoes, remove the skin, cut the pulp. Squeeze lemon juice, add salt and black pepper. Pour the mixture over the pieces of fish and let sit for 15 minutes.
Heat vegetable oil in a deep skillet. Fry the onions in it, then add the carrots and tomatoes. While stirring, simmer everything until the excess liquid evaporates. Salt vegetables. If you prefer a less fatty option, you do not need to fry the carrots and tomatoes.
Wash and dry a liter jar thoroughly. Preheat it in the microwave. Place half of the vegetables in a jar, then fill it with fish. Place the butter on top of the fillet pieces and cover with the remaining vegetables. Lightly tamp the mixture with a spoon and pour over the juice in which the fish was marinated, mixed with a couple of tablespoons of vegetable oil. Put a saucepan on the stove, put a towel on the bottom, pour in water and heat it to 60 ° C. Gently dip the fish jar into the pot so that the water level is above the contents of the jar. Place a lid on it, bring the water to a boil and cook the fish for about 20 minutes. Remove the jar from the pot, let it cool slightly, and place the fish and vegetables on plates.
