The liver is a very useful by-product. It is rich in iron, copper, vitamins, potassium, sodium, calcium, magnesium and other useful substances. When choosing a liver, you need to pay attention to its color: in young animals, it has a lighter shade. It is better to give preference to just such (lighter) pieces with a minimum of films. A good liver on the cut is smooth and moist, has a homogeneous, loose and delicate structure. The preliminary preparation of the liver for further culinary processing includes the often time-consuming stage of removing the films and bile ducts.

Step 1
If you purchased frozen liver, then try to remove the films from it without defrosting the piece. Rather, it only needs to be slightly defrosted, then the process of removing the films will be quite easy. Preliminarily, a piece of liver should be washed well with water. And after removing the film and final defrosting, rinse again.
Step 2
If it is required to clear the chilled liver from the films, then the procedure will be somewhat different. Rinse the liver thoroughly in running cold water. Place it in warm water for 2-3 minutes. Then remove from the water and place the piece of liver on a cutting board, on one side, cut off (trim) a small section of the film. Place your thumb between the liver and the film, and, carefully peeling off the film, peel it off from the entire piece.
Step 3
Some housewives recommend sprinkling the surface of a piece of liver with coarse salt and rubbing lightly before removing the films. It also facilitates the process of removing the films from the liver.
Step 4
If you come across a piece of liver with a large number of large veins, then you will have to remove all of them, if possible, so that they do not violate the delicate structure of the finished dish. To clear the veins from the liver, cut it into smaller pieces by cutting it along the bile ducts and blood vessels. Remove the films in the veins that have opened in this way, carefully separating them from the liver, cutting with a sharp knife.
Step 5
There are the following guidelines for separating the film from pork liver. Either place a piece of liver in hot water for 20-30 seconds, or scald it with boiling water. After this procedure, the films can be easily separated from the liver in the manner described above (item 2).
