About an hour before the end of cooking, parsley root, celery, onions with husks can be dipped into the pan. These spices will give your food a unique aroma and a pleasant golden hue.

Let the finished broth settle a little. Then remove accumulated grease from the surface and strain the liquid through a napkin or sieve.

If the cooked broth turns out to be cloudy, it is necessary to introduce a draft into it. Pass the chicken meat through a meat grinder, add the bones and wings of the poultry to it. Fill them with cold water and leave for at least 2 hours in the refrigerator. Then add some beaten egg whites and salt to the meat. Sauté carrots, onions and celery separately. Into the finished broth (its temperature should be no more than 60 degrees), add a draft and fried vegetables. Place the pot over high heat. After the liquid boils, skim off the foam and reduce the heat. Cook the broth for another hour and a half. After cooking, be sure to strain it.
