To make pancakes with yeast, you will need the following ingredients: 300 g of wheat flour, 300 ml of milk, 2 chicken eggs, 20 g of fresh yeast, 50 g of granulated sugar, a pinch of salt, 50 g of vegetable oil. You will also need refined vegetable oil for frying pancakes.

The pancake dough will turn out to be especially tender and airy if you sift the wheat flour at least 3 times. Fresh yeast can be replaced with dry baker's, but in this case the quality of the dough can be significantly reduced.

Fresh yeast is diluted in a little warm milk. The mixture is left alone for about a quarter of an hour. During this time, a frothy "cap" should appear on the surface of the milk, which is a sign of the readiness of the dough.

The egg yolks are separated from the whites. The milk is heated to a temperature of 35-40 ° C and mixed with salt, sugar and egg yolks. It is better to use a mixer or blender to get a uniform mixture. Dough is added to the prepared egg-milk mixture.

Sifted wheat flour is introduced gradually, in small portions. Knead the dough until a homogeneous consistency is obtained. Beat the egg whites into a strong foam and add to the dough. Then the components are quickly mixed and vegetable oil is added. The dough is mixed again and left for half an hour in a warm place.

The preparation of yeast pancakes begins when the dough rises well. Vegetable oil is poured into a deep frying pan. Heat a skillet over medium heat. If you fry the pancakes with high heat, their middle will not have time to bake. The level of vegetable oil in the pan should be about 1 cm. If necessary, add vegetable oil to the pan.

The dough is spread in butter using a tablespoon, which is dipped in water. Leave enough space between the pancakes, as the dough rises strongly during frying and the pancakes can stick together.

Pancakes are fried from 2 sides until golden brown. The finished pancakes are first placed on paper napkins, which effectively absorb fat. Then the pancakes are transferred to a dish and served with jam, honey or sour cream.

You can add pieces of fruit, raisins, chopped nuts to the pancake dough. This will significantly diversify the taste of the dessert.
