A little imagination, and the most ordinary potatoes can become a pearl of a feast. At home or in nature, prepare original potato dishes for a festive or everyday table, and you will not only diversify the usual menu, but also surprise your loved ones and guests.
Potato kebab
Ingredients:
- 10 medium potatoes of approximately the same size;
- 200 g of unsalted lard;
- 1/2 tsp dried rosemary;
- 1/3 tsp each ground black pepper and cumin;
- 1 tsp salt.
Cut the bacon into thin, almost translucent, square slices. Wash the potatoes. Peel it if the tubers are not young, otherwise do not cut the peel, but just wash it well. Cut them into longitudinal circles no more than 5 mm thick, sprinkle with salt and spices and mix gently with your hands.
Skewer the potatoes, alternating with lard. Wrap the kebabs in foil and fix it well. Put them on a preheated grill and fry for 25-30 minutes, then remove the silvery paper and hold the dish over the coals for a few more minutes to brown the potatoes and turn the bacon into golden greaves.
Potato curls
Ingredients:
- 500 g of potatoes;
- 1 chicken egg;
- 50 g butter;
- 50 g of hard cheese;
- a pinch of nutmeg and ground black pepper;
- 1/2 tsp salt;
- vegetable oil.
Remove the butter from the refrigerator to soften. Wash the potatoes and place them in a pot of water. Put the dishes on medium heat, cook the tubers "in their uniforms" for 20-30 minutes. Cool them, peel them off and crush them with a special press or blender.
Finely grate the cheese and combine in a large bowl with egg, butter, salt and spices. Add mashed potatoes there and mix until smooth. Preheat oven to 190oC. Line a baking sheet with parchment paper and brush with vegetable oil. Fill a pastry bag with the prepared vegetable mass. Squeeze it onto oiled paper, tapering it. Bake potato curls 15-20 minutes until brownish.
Sweet potato cookies
Ingredients:
- 500 g of potatoes;
- 2 chicken eggs;
- 70 g flour;
- 1 tsp dry yeast;
- 100 g of dark raisins;
- 200 g of sugar;
- 1 tsp ground cinnamon;
- grated zest of 1 lemon;
- a pinch of salt;
- vegetable oil;
- 30 g of icing sugar.
Boil the potatoes as described in the previous recipe and chop. Soak the raisins in warm water for 20 minutes, put them in a colander, wipe dry and roll in a little flour. Combine mashed potatoes with egg yolks, remaining flour, yeast, zest, sugar and stir. Beat the whites with a pinch of salt until dense foam with non-falling peaks, add to the dough. Add raisins and cinnamon there.
Grease a sheet of the oven with vegetable oil, place the cookies on it with a tablespoon and press a little, giving it an oval shape. Cook potato baked goods for 20-25 minutes at 180oC. Sprinkle it with powdered sugar.
