As a delicious homemade dessert, this banana curd cake will add a twist to family and holiday teas. The recipe for the cake is quite simple, and the taste is spicy and amazing.
Preparation
To make the cake, you will need the following ingredients per 8 servings:
for the first layer (bottom):
- flour - 1, 5 cups;
- kefir - 2/3 cup;
- vegetable oil - 70 g (1/3 cup);
- egg - 1 piece;
- soda - 0.5 tsp (quenched with vinegar);
- vanilla sugar - 1 sachet;
- sugar - 3-4 tbsp. spoons;
- salt - on the tip of a knife;
for the second layer (curd-banana):
- banana - 1 pc;
- cottage cheese - 200 g (1 pack);
- sugar - 3-4 tablespoons;
- eggs - 2 pcs;
- lemon juice - 1 tbsp. the spoon.
First layer (kefir dough)
Pour kefir into a deep bowl, add butter, egg, sugar, salt and soda, quenched with vinegar. To stir thoroughly. Pour flour into a separate bowl and pour the prepared mixture into flour, then mix thoroughly. The dough should be of moderate consistency: not runny, but not too steep. The spoon should be hard enough to turn. If the dough turns out to be very thick, you can add a little kefir to it, if on the contrary - liquid, add flour. Grease a baking dish with oil and pour the finished dough into a baking dish. Optionally, you can add chopped nuts, raisins, dried apricots to the dough - depending on your preferences.
Second layer (curd-banana)
Grind the banana (if desired, you can use a mixer or just mash with a fork). Prepare the curd, add two yolks, two tablespoons of sugar and chopped banana to the curd, beat, add a spoonful of lemon juice at the end. Beat the whites separately with two tablespoons of sugar. Combine the two resulting mixtures, mix thoroughly. Gently put the prepared banana-curd cream on the first layer (dough) and smooth. Sprinkle with sugar or icing sugar.
Preheat the oven, put the pie in the oven and bake for about 25-30 minutes at a temperature of 180-200 degrees. The readiness of the cake will be shown by an appetizing golden brown crust on top. The baking time depends on the size and thickness of the cake. It is recommended to bake this cake in a wide pan so that the layers are not too thick. One and a half to two centimeters is the ideal layer size.
Take out the finished cake, let it cool slightly and garnish if desired with chopped nuts, pieces of fruit, berries, sprinkle with powdered sugar or special confectionery decors and sprinkles. You can serve the cake for tea hot, warm, and cooled. In any case, the pie will remain soft, tasty and tender. If the pie is allowed to stand a little, then the delicate sweet curd-banana filling will slightly saturate the bottom layer of the dessert.
