Banana cake is a traditional baked product in South America. There, the pie is most often served with a scoop of ice cream. Due to the natural sweetness of bananas, little sugar is added to the dough. These pastries are nutritious and healthy.
It is necessary

- flour - one and a half glasses;
- 5 bananas;
- 6 eggs (3 yolks per dough
- 3 squirrels in the filling);
- butter (100 gr per dough
- 1 tbsp. l. in the filling);
- granulated sugar (2 tablespoons in the dough
- 2 tbsp. l. in the filling);
- raisins - half a glass;
- walnuts - half a glass;
- cinnamon - 1/2 tsp;
- nutmeg - 1/4 tsp;
- ground ginger - 1/2 tsp;
- allspice ground pepper - 1/2 tsp;
- vanillin - 1 tsp;
- a pinch of salt;
- baking dish;
- cling film;
- blender or mixer.
Instructions
Step 1
Soften the butter, preferably rubbing with your fingers.
Step 2
Prepare the "base" of the cake by mixing salt, sugar and flour. Add crumbled butter. Then pour in the yolks and knead into a soft "stringy" dough. Wrap it in plastic wrap and refrigerate for 1-2 hours.
Step 3
While the dough is cooling, prepare the filling. Soak the raisins in water (if necessary, you can use rum or grape juice to enhance the aroma). Crush the walnuts.
Step 4
Peel the bananas and smooth them into a soft puree (using a blender or fork). Mix bananas with butter.
Step 5
Add granulated sugar, vanillin, cinnamon, nutmeg, ground allspice and ginger to the mass. Beat everything with a blender or mixer. Transfer the mixture to a deep bowl and add the crushed walnuts and raisins to it.
Step 6
Roll the chilled dough into a flat cake. Lubricate a round shape with a diameter of 22-26 cm with oil. Put the dough there, making the sides. Pierce the crust with a fork or toothpick in several places.
Step 7
Refrigerate the proteins. Whisk them together with the salt to form a thick, dense foam. Stir from top to bottom, in smooth movements, combine the proteins and salt with the spicy banana mass.
Step 8
Preheat oven to 200 degrees.
Step 9
Place the filling on the rimmed crust and place the banana pie in the oven for 5 minutes. Then lower the temperature to 180 degrees and cook for about 25 minutes more.
