Chicken fillet is a healthy and flavorful food. It is fried, stewed, baked. Cookbooks contain hundreds of different recipes that combine fillets with dozens of ingredients. Some of them are particularly original.
Chicken fillet stuffed with apples and goat cheese
Chicken fillets are often stuffed. The classic dish is cordon blue - chicken breast stuffed with cheese and ham and breaded in breadcrumbs. Also, spinach, chopped spicy herbs, mushrooms, various vegetables and even nuts are often put in the filling. Try to cook chicken fillet with unusual filling - apples and spicy goat cheese. You will need:
- 2 chicken breasts without skin and bones;
- 2 slices from a strong apple;
- 60 grams of goat cheese;
- ½ teaspoon lemon zest;
- 2 tablespoons of wheat flour;
- 1 chicken egg;
- 1 glass of bread crumbs;
- 30 grams of grated parmesan cheese;
- 1 tablespoon of olive oil.
Stuffed breasts can be served with fresh salad leaves. Also sour cream sauce with garlic or spicy tomato sauce is suitable for them.
Preheat oven to 180C. Wash and dry the chicken breasts, cut each in half across, but not completely, but with a "book". Lightly beat the fillets and season with salt and pepper. Cut the goat cheese into two pieces. Place a slice of apple and cheese in the center of each fillet, sprinkle with lemon zest. Fold the breasts and press lightly to hold them together. Sift the flour and salt into one saucer, beat the egg in a bowl, and in the third saucer, combine bread crumbs and parmesan cheese. Dip each stuffed fillet first in flour, then dip in a beaten egg, then dip in the crumbs and cheese mixture. Place on a baking sheet lined with baking paper and bake for 20-25 minutes until golden brown.
Breaded chicken fillet
Another popular way to cook chicken fillet is to breaded it. For breading, bread crumbs are used, often mixed with dry herbs or grated cheese, sesame seeds. An original and tasty breading is obtained from crushed nuts. Take:
- 1 cup of bread crumbs;
- salt and freshly ground pepper;
- 3 large chicken eggs;
- 1 tablespoon of water;
- 2 chicken breasts;
- 2 tablespoons of vegetable oil;
- 2 tablespoons of butter;
- 1 ½ cups almond petals.
Often housewives want to cook breaded chicken “like in KFC”. This breading is made from dry corn flakes.
Wash and dry the chicken fillet. Cut it into long, longitudinal slices. Prepare the breading by whisking eggs in one bowl, mixing bread crumbs with salt and pepper in another, and placing in a third almonds. Submerge each slice of chicken in succession, first in the egg mixture, then in the bread crumbs, then again in the beaten eggs, and finally roll in the almonds. Heat the vegetable oil in a deep skillet, then add the butter to it, when the mixture begins to bubble, add the chicken and fry each bite on both sides for two minutes. Transfer the chicken fillet to a baking dish and cook it for another 10-12 minutes in the oven preheated to 200 ° C.
