Doner kebab
Shawarma has firmly entered the life of many people. But the real name of this dish is Doner Kebab. This is a traditional Turkish dish. The meat was grilled, chopped very finely and served with flatbread, rice and salad. But all the ingredients were served separately.
Turks Kadir and Mahmut, who decided to immigrate to Germany in the early 70s, decided to wrap such a dish in Pita. The Germans supported the idea. The dish was made quickly and attracted by the fact that you could eat on the go. Since then, Doner Kebab has become a popular street food.
For 3-4 servings you will need:
Minced lamb - 500 gr.
Salt 2 tsp
Cumin - 1 tsp
Dried coriander - 0.5 tsp
Onions - 1 pc.
Garlic - 2 cloves
Breadcrumbs - 100 gr.
Olive oil - 300 ml.
Egg yolk - 2 pcs.
Cinnamon - 1 tsp
White wine vinegar - 1 tsp
Garlic - 3 cloves
Pepper - To taste
Vegetables - To taste
Method for preparing cutlets:
1. Stir the minced meat with finely chopped onion, garlic and seasonings, add salt and make a few cutlets.
2. Take an empty high tin can, cover it with a plastic bag and put the cutlets there.
3. Tamp well and close with a bag.
4. Place the jar in a pot of boiling water and in the oven for 1 hour.
Mayonnaise preparation method:
5. Beat olive oil, mustard, clove of garlic, wine vinegar, egg yolks, salt and pepper with a mixer.
Cut vegetables: it can be cabbage, tomatoes, cucumbers.

Turkish pizza

Ingredients:

Onions - 20 gr.
Garlic - 2 cloves
Parsley - 15 gr.
Minced meat (beef or lamb) - 100g.
Tomato paste - 15 gr.
Sweet pepper paste - 15 gr.
Seasonings to taste (paprika salt, pepper)
Flour - 425 gr.
Water - 75 ml.
Milk - 75 ml.
Cooking method:
1. Cut vegetables (tomato, pepper, onion, garlic, parsley) into small cubes. Precisely cut by hand so that the vegetables do not give a lot of juice.
2. Stir the minced meat with vegetables.
3. Add tomato and pepper paste to the filling, as well as seasoning, salt. Mix.
4. Chop the filling again with a knife and set aside for 30 minutes.
5. Knead the tough dough. Take flour, salt 12 grams, water, milk. Leave to rest for 30 minutes.
6. Divide the dough into 3 pieces. Roll each into circles with a diameter of 25 cm. You should get a thin dough.
7.40 gr. Spread the fillings on the dough from one edge and spread thinly with your hands around the circumference. Fill the cake completely.
8. Put the dough in a dry non-stick frying pan. Keep on fire for 2 minutes over medium heat and cover with a lid. Bake for another 3 minutes.
Turkish coffee
Originally from Ethiopia, coffee is prepared in a special way in Turkey. There he became the national drink. At first, coffee was considered the drink of the rich. The preparation of Turkish coffee was taught to women. Future husbands chose their wives on the basis of how well she knows how to prepare this drink.
Ingredients:
Ground coffee - 5 tsp
Water - 1.5 cups
Salt - a pinch
Sugar - 1 tsp
Cooking method:
1. Pour the coffee into a Turk, add salt, sugar and pour cold water, stir.
2. Put on low heat. As soon as the foam starts to rise, remove from heat and put back on. Repeat 5 times.
3. Spoon the foam into a separate container. Pour into mugs and spread the foam on top. Serve with a glass of cold water.
