A tasty and light snack will suit everyone's taste. The undoubted highlight of this salad are scallops, which are deliciously combined with grilled vegetables. Cooking scallop salad will not take more than 30 minutes.
It is necessary
- - 1 eggplant;
- - 2 sweet peppers (red and yellow);
- - 2 tomatoes;
- - 60 g salad mix: corn and radicho;
- - 8 large scallops;
- - 3 tbsp. l. olive oil;
- - 1 tbsp. l. lemon juice;
- - 1 tbsp. l. balsamic vinegar;
- - 1 tsp honey;
- - 1 clove of garlic;
- - ½ tsp. Provencal herbs (to taste);
- - salt, black pepper (to taste).
Instructions
Step 1
Cut the eggplants into slices. Salt. The eggplants will produce juice that needs to be drained. Sprinkle the eggplant with oil, then place it in a grill pan.

Fry on both sides and iron on a paper towel.

Cut the pepper into slices and fry until soft. We also put it on a paper towel.
Step 4
Scallops must be salted, pepper, sprinkled with lemon juice. Leave to marinate for 10-15 minutes.
Step 5
Place the sliced tomatoes in the grill pan. Fry on both sides, then fry each side of the scallops for no more than two minutes. Otherwise, the meat will become tough.
Step 6
Preparing the dressing. This will require 1, 5 tbsp. olive oil, balsamic vinegar, honey, crushed garlic, 1 tsp. lemon juice, provencal herbs and salt. Mix thoroughly.
Step 7
Choosing a large dish. We spread lettuce leaves, grilled vegetables and scallops. Watering with dressing.
