Good wine matures over the years. It is kept in cellars at a certain temperature and under special lighting. But you can make an excellent homemade wine in just a couple of weeks.
It is necessary
- - 2 kg of fresh berries;
- - pure water;
- - 3 kg of sugar;
- - yeast.
Instructions
Step 1
Place the berries in a bucket or tub. Dishes should be plastic, ceramic, wooden, but not metal, otherwise the taste and color of the drink will deteriorate. Cherries, red currants, mountain ash, raspberries, gooseberries are suitable for wine. Pour water into the bowl so that it slightly covers the berries.
Step 2
After a couple of days, knead the fruits with your hands so that they release as much juice as possible from themselves. Leave the resulting mass in this state for another day. Then strain and squeeze out the rest of the berries well.
Step 3
Pour the resulting juice into a 5 liter bottle. Add granulated sugar. For fast fermentation, you can also add some dry yeast. Mix well. If your juice is very thick, dilute it with water.
Step 4
Put a rubber glove on the bottle and place it in the sun. When the glove is inflated, the mash can be transferred to a dark, cool place to slightly slow down the fermentation process and let the wine brew. As a rule, this procedure takes one and a half to two weeks.
Step 5
When the glove "falls", the mash must be filtered. Then taste the future wine. Does it have enough sugar and strength? If the drink turns out to be sour, you need to add sugar to it, put on a rubber glove again and wait until the juice ferments again.
Step 6
Then, pour the wine into a large enamel saucepan and place over low heat. Bring to a boil and remove from heat. Cool and bottle. You can add a small amount of alcohol or vodka to the finished wine to add more strength, or you can leave it as it is.
Step 7
Place the bottles in a cool, dark place, such as a closet or cellar. There, the wine should be infused for a week. After that, the drink is ready to drink. It will be a great addition to any festive meal.
