Wine vinegar is widely used in cooking and folk medicine. If your wine is sour, then you do not need to pour it out. This drink can be given a second life by making wine vinegar.

If table wine is sour, then you can make wine vinegar from it according to the following recipe. Take 1.5 liters of the indicated drink and pour it into a five-liter glass jar. Add 4.5 liters of boiled water to this.

Sugar honey will also go to wine vinegar. Take 400 grams of honey or sugar and add to the container too.

Next, pour the tartar into the mixed liquid - the sediment from the wine, stir the contents again. Place the container covered with gauze in a dark, warm place. Here the wine will ferment for 50-55 days.

Then place a triple layer of cheesecloth on a sieve or colander and strain the resulting liquid product. Pour it into bottles, close tightly. Store homemade wine vinegar in a cool place.

Add it to salads. It is good for marinating fish, meat. You can make vegetable rolls with vinegar from fermented wine. Since it matures for almost 2 months, prepare it in advance so that it can be used for canning during the harvest season.

The vinegar has a long ripening period, so it should be done long before the season of seaming and spinning.

If you want to make wine vinegar according to an old Portuguese recipe, you will need an oak barrel or at least wood chips.
Step 8
First you need to get the leaven, which is made according to the previous recipe. Just use grape juice instead of wine. Enough 150-200 grams of wine vinegar.
Step 9
Pour it and 1.5 liters of sour wine into an oak barrel. If not, then take a glass container and place a couple of oak chips there. Add a cinnamon stick if desired.
Step 10
Leave the container for a month at room temperature indoors. After this period, the product will be ready. Store it in the refrigerator. After a little vinegar remains at the bottom, add more sour or regular wine, leave it in the room and after a month the wine vinegar will be ready again.
