Pancakes are quick and easy baked goods that are great for breakfast or a simple tea party when there is no time to prepare complex dishes. Served with sour cream, jam and jam, condensed milk.
Kefir pancakes
Quick pancakes can be prepared using kefir. They turn out to be soft, sweet and do not dry out for a long time. It is in such pancakes that you can add grated vegetables and fruits, then they will acquire an original and very unusual taste. Zucchini, bananas or sweet apples are perfect for these purposes.
You will need the following components:
- kefir, 500 ml;
- flour, 400 grams;
- egg, 2 pcs.;
- zucchini, 1 small;
- sugar, 1 tbsp. spoons;
- vanilla sugar, 1 tbsp. the spoon;
- baking powder, 1 tsp.
Whisk the egg whites together with the usual sugar into a white mass. Add yolks, kefir, baking powder, vanilla sugar and pre-sifted flour to it. Stir the mixture thoroughly until smooth.
There should be no lumps in the dough. If the consistency turns out to be somewhat thick, you can dilute it with water.
Peel the zucchini from the peel and seeds. If the vegetable is young, you can simply rinse it under water and not peel it. Then rub with a grater, squeeze a little from the juice with your hands and add to the dough. Mix everything.
Preheat a skillet, pour liquid sunflower oil into it and start frying pancakes. To do this, use a tablespoon to spread the dough there and fry it on both sides.
Remember to add oil when the surface of the pan becomes dry.
Ready meals can be eaten both hot and cold.
Yeast pancakes
Pancakes according to this recipe are tall, fluffy and incredibly soft.
For quick yeast pancakes, you need to prepare:
- milk, 1 glass;
- sugar, 2 tbsp. spoons;
- dry yeast, 2 tsp;
- flour, 300 grams;
- egg, 1 pc.;
- salt;
- oil for frying (vegetable).
Prepare the dough. To do this, mix yeast with sugar (1 tbsp), add milk (1 tbsp) and flour (1 tbsp). Rub, put to rise where it is warm.
Heat the rest of the milk so that it is slightly warm, and mix with salt, the rest of the flour and sugar. Whisk until smooth, without any lumps, consistency.
Take an egg and detach the yolk from the white. Beat the yolk a little with a fork and add to the previously obtained mass. Introduce the matched dough there, lightly sprinkle it with flour and again leave the dough warm for 10 minutes. Beat the protein and gently add it to the matched dough, stir.
Bake the pancakes in a preheated skillet, scooping up the dough with a tablespoon. Yeast pancakes are served hot along with sour cream.
