Place the cream in a mixing bowl and set the mixer speed to the lowest setting. Begin whisking, then add sugar and vanilla, whipping speed can be increased slightly. Don't overdo it and stop in time for steady peaks to prevent the cream from turning into butter - as soon as the mass thickens, stop whipping.
